The harvested batch is cooled quickly, before it carries the field's heat any further. The fruit's clock slows here; shelf life is won or lost in this first step.

From pre-cooling to delivery the temperature is kept controlled and unbroken. If even a single link in the chain warms up, the freshness gained does not come back.
